Nicaraguan coffee is often overlooked and underrated, often used simply as a roasting or blending bean. However in the cup, coffee from Nicaragua possesses qualities similar to its South-American counterparts. The Nicaraguan variety is a coffee of stature with a large bean, mild taste, a pleasing balance with little acidity. Almost all the coffee produced by the country is grown under shade, and most attention should be paid to the outstanding coffee produced by the regions of Matagalpa and Jinotega.
